Spring Me From The Cold

Did it snow at your house yesterday too?  Yeah am I tempting fate by running around social media sites and hash tagging #SpringShapeUp ???

Ignore the heart shaped hands, there is no love for more snow.  Me wants the heat!!!!  I digress, it is still the Spring Shape Up and on tap for today is strength moves and sweet potato.  Not together people, not together.

Here’s what I did with my sweet potato….  SO GOOD.  May I peer pressure you to do it?  I made my protein pancake recipe and swapped the pumpkin for 1/2 cup of mashed sweet potato.  Plus, I made it with chocolate protein powder.  Seriously :D .  Just microwave your sweet potato and scoop out the insides.

How to microwave a sweet potato:

  • Wash your sweet potato and poke holes through the skin with a fork
  • Lay a damp paper towel on a microwave safe plate
  • Microwave 2-3 minutes on both sides (flip halfway through)
  • Cut the sweet potato lengthwise to check if it it’s cooked through, if not slice some cross cuts into it and put it back in for 30 seconds – 1 minute

    Morgan Morgan Morgan – you`re the reason for this first day of spring weather….you should know better than to `spring` to soon. My favourite sweet potato recipe is sweet potato and coconut soup….mmmmmmmm…..want it now! soooooooo good.
