Ignore the heart shaped hands, there is no love for more snow. Me wants the heat!!!! I digress, it is still the Spring Shape Up and on tap for today is strength moves and sweet potato. Not together people, not together.
Here’s what I did with my sweet potato…. SO GOOD. May I peer pressure you to do it? I made my protein pancake recipe and swapped the pumpkin for 1/2 cup of mashed sweet potato. Plus, I made it with chocolate protein powder. Seriously . Just microwave your sweet potato and scoop out the insides.
How to microwave a sweet potato:
- Wash your sweet potato and poke holes through the skin with a fork
- Lay a damp paper towel on a microwave safe plate
- Microwave 2-3 minutes on both sides (flip halfway through)
- Cut the sweet potato lengthwise to check if it it’s cooked through, if not slice some cross cuts into it and put it back in for 30 seconds – 1 minute
