I’ll be honest, when I had this genius idea yesterday it was like a scene from a movie. *Slow motion, music playing, thoughtful pose* … PURE eureka. (Side note, can we all agree we don’t use the word eureka enough. That changes today.)
What’s that in my soup? Pumpkin. Ohhhhhh snap. Good idea right? My boss and other peers at work seemingly weren’t as excited about this as I was. I opened a can of veggie soup and poured it into a tupperware, then scooped a bunch of pumpkin into it, and then brought it to work. With this much brilliance I’m not sure why my grade report isn’t full of A+s. There’s probably a conspiracy theory.
Seriously though, extra veggies, extra fullness. It made my veggie soup into almost a stew consistency. Epic winning.

I love adding pumpkin to soups as a thickener. I aslo use tofu for cream-based soups (like my creamy tomato-basil).
Other veggie sneaks… grated into yogurt, spinach in my smoothies and microwave cakes, chopped finely in tomato sauces… basically any where I can add more, I do!
Spaghetti Squash… Spinach & PUMPKIN! YAY!!!! Those are my sneaky veggies… They are actually my MAIN FOCUS in my meals!
I am completely obsessed! I absolutely love to just shove a spoon in a can of pumpkin and eat away!
