Mini Muffin Delight

Sometimes I lack post titles.  Yup.

Sometimes Brad steals breakfast supplies.

Therefore I had mini muffins for breakfast … and coffee and a spinach banana chocolate smoothie.

It’s Friday and we STILL STILL STILL have food that was meal prepped on Sunday.  Of course it’s just the ends of things.  There’s still a few egg muffins, and these muffins, and… okay that’s it.  But it really helps.  (Click for muffin recipe).

Okay I have a question for you if you’re not meal planning >>> What’s holding you back? Okay and one last little thing for Friday.  I saw this saying on Instagram yesterday and had a friend who I thought could use this, hope it makes you smile too :) .

    I just really started meal planning about two weeks ago. Life is so much simpler and we are eating so much healthier! The things that I am in need of help with is prepping, I don’t fully understand what I can and can’t pre prep on my weekend. Along with where to find recipes, we are in temporary housing right now and can’t use the oven. It’s a PAIN!! Thank you for your post! Can’t wait for the party!

    Funny you should mention it- I just posted a weekly plan this morning! For me it was honestly laziness and difficulty in doing a “big shop” since we live in the city and walk to the market. But we’ve been making it work!

    Meal planning can work wonders for people…. I’m just so lazy about it. :p I think it being only me, and living in a town where the grocery store is literally a 2min drive (10min walk) just makes me a bit lazy about planning…

      mine’s just around the corner too but there’s nothing that makes me angrier than remembering on my way home that I need to pick up stuff for dinner!

  6. Jill and I started a meal planning link up every Sunday, and it has helped so much! I love having a post to keep me accountable, and the week runs so much more smoothly when I don’t have to spend extra time thinking about dinner each day.

    If I don’t meal plan its generally because I am being too lazy because it certainly is not because I don’t have time because it saves me time in the long run (and money because I buy what I need). What I do is draw up a menu for us and the kids and then write my shopping list. I do this generally Sunday evening & I shop Monday morning.
    So last weeks menu looked like this:
    MONDAY: (A)Chicken curry (kids)BBQ chicken chunks & Roll with cucumber
    TUESDAY: (A)Spaghetti mince & courgettes (kids)Mince & rice with gr beans
    WEDNESDAY: (A)Babotie (kids) Cold Dinner=ham, cucumber, carrot sticks, wraps
    THURSDAY: (A)Chicken & broccoli (kids)Pizza
    FRIDAY: (A)Steak, egg & butternut chips (kids)Steak & chips/baked potato

    Important thing for me is to actually print and stick the menu up on the fridge then we all know whats on the menu and there are no fights about it when a plate gets put in front of you …. every one is happy (especially mommy). ps we all pretty much have the same thing for breakfast and lunch so those are standard!

  8. I just meal planned for the week for the first time this past weekend. I can say that it simplified my life tremendously! The main thing was just having an idea of what I wanted to make so I had all of the ingredients in the house. Even if I changed my mind about what I wanted to make, I had the ingredients for a full meal.

  9. Okay, meal planning? Not a problem…I’m like a meal planning queen. I can whip up a week or two worth of meals in second flat AND the grocery list that goes with it, for under the amount of the national standard of food stamps.

    Now, my struggle? Working out and portion sizes. I love working out, I struggle to get a minute when my boys are sleeping or occupied. Portion sizes…well, that’s self explanatory. I’m going to use the excuse that my boy nurses so much I’m starving all the time. My love handles tell me another story.
