Sunday night I made vegetarian sloppy joes for the first time in forever (and Brad commented so). I don’t think I’ve published my recipe before but this time I wrote it down so I could share it with you.
Vegetarian Sloppy Joes Recipe
- 2 tablespoons of oil
- 1/2 small onion (you can use more, I just don’t love onions)
- 1 green pepper, diced
- 1 red pepper, diced
- 3 cups of cooked lentils
- 1/4 cup of mustard
- 1/4 cup of maple syrup
- 1 can crushed tomatoes
- 1 tablespoon smoked paprika
- 2 tablespoons chili powder
- 1/4 teaspoon cayenne pepper (optional)
Cook your lentils ahead of time. Dice up your veggies and cook them in the oil over medium heat. Once they are cooked through add the can of tomatoes, cooked lentils, mustard, syrup, and spices. You can eat as soon as they’re heated through but I like to turn the heat down on the stove and simmer for 30 minutes and all the flavours meld together wonderfully. Spoon mixture over bread or buns and if you like sprinkle a bit of cheese on the top.

Would any kind of lentils work or is a particular variety best for the recipe?
I use green lentils, they seem to hold up better than red, red would likely be a bit mushy in the recipe but you could try – I’m all about experimenting hahaha … let me know if you do!
I’ve only had sloppy joes once in my life, in 7 or 8th grade for lunch. I remember it being pretty tasty (and it was a SCHOOL lunch!) so I think I would like the veggie version even more! Nice recipe.

lentils are my FAV! so cheap, so delicious … I often forget about red lentils though, must use those more often
