I’m sure everyone is full up on making your plans for tonight whether it be getting your hair did, painting nails, renting movies, cooking up a storm, etc, etc. But I wanted to stop by quickly to say HAPPY NEW YEAR!!!!!!
… and leave you with a delicious recipe. I made this for one of my family dinners over Christmas and a few people asked for the recipe. Luckily, I kept the ingredients in my big ol noggin.
Ever made a salad with sweet potato? Neither had I, but trust me, it’s delicious!!!

Roasted Sweet Potato and Chickpea Salad
- 3 sweet potatoes (chopped and roasted)
- 4 cups of chickpeas (for me it was 2 cans)
- 2 red bell peppers
- a bunch of green onion
- 2 avocados
- juice of 1 lime
- 1 teaspoon each of cayenne pepper, chili powder, cumin, garlic powder
- olive oil (for drizzling on potatoes)
Chop sweet potato and coat with olive oil and spices. Roast in the oven on a baking sheet for 45 minutes at 350 degrees. Let sweet potatoes cool after roasting. In a large bowl combine sweet potatoes, chickpeas (drained and rinsed), chopped green onion, chopped red pepper, avocado, and lime juice.
If you need something to take a potluck tonight I highly recommend it.
