Inside The Lunchbox

You know … like Inside the Actor’s Studio?

Tuesday is an insanely long day on campus.  I’m six weeks into the semester and every week it’s a struggle to pack enough food (on top of ALL the books, laptop, etc).  Here’s what was in my lunch yesterday (or rather my dinner since I’m on campus until 9pm).

  • spinach and protein shake
  • watermelon salad
  • sliced apple (aka apple snacks)
  • roasted cauliflower
  • veggie burger on thin bun with sliced tomato

MMmmmm satisfying :P

And that my friends is all I have to say today.  Because aside from eating well and fuelling my brain, I spent every other waking minute working yesterday.  Ninety-nine percent of the day was spent on studying for my finance exam and one percent was spent doing freelance work.

Today it’s going to be all management accounting.

If you had all the ingredients possible in your fridge what would your BEST PACKED LUNCH look like?

    My best lunch would be hardboiled eggs and rice noodle pasta with chicken. I guess that’s what I must be craving right now…

  3. Awesome job on packing your lunch! I know when I have a ton of books to bring, I usually let the food slide and either don’t eat, which isn’t good, or buy food, which usually isn’t good either. Good luck on your exams!

  4. Ooh your lunch sounds amazing!! My best packed lunch would be a turkey, Miracle whip, lettuce and tomato sandwich (but it has to be the good turkey) along with a side of Greek yogurt and a fresh apple… yum!

  6. my best packed lunch? a gigantic salad with lots of fresh veggies and hardboiled eggs with cottage cheese or hummus for the “dressing”. snacks would be grapes, and carrots with nut butter!
