My First BBQ Tofu

DAMN!  Yesterday was a day of gooooood eating.  We slept in for what seemed like the first time in forever.  I decided that it was a pancake kind of morning.  On Friday I bought a tub of Magnum Quattro in vanilla (their protein powder), and wanted to try it out in my regular pancake recipe.  I googled around a bit but ended up just throwing a scoop in and not changing anything else in the recipe.  They turned out perfect, totally delicious, but insanely dense.  I could barely get through these four pancakes.

Dinner time was even MORE good food.  Gosh I am so happy we have a BBQ again.  It’s so easy to cook two variations of the same meal when you’re dealing with a big grill.  I put some tofu steaks on, and Brad had chicken.  He was cooking enough to use as chicken sandwiches for lunches.

It was my first time trying bbq tofu.  My tofu preparation skills are seriously lacking considering I’ve been a vegetarian for years.  Most of the time I bake tofu and overcook it into a rubbery mess.  This time on the bbq, I actually undercooked it a little.  But it was still good.  Who doesn’t love grilled food?

As you can see we ate in the backyard.  Ohhhh summer!  Never leave me :P .

    This looks absolutely amazing! I recently became a vegan, so I’m always looking for new ways to eat tofu.

    That tofu looks great! How did you season it?
    And cauliflower and peppers! I’d have to drown that plate in ketchup, though.

    My dad has a delicious recipe for marinated vegetable shish kebabs. They are sooooo good. Eggplant, mushrooms, onions, peppers and tomatoes. Yum.
