Easy Healthy Apple Crumble

Want another adjective – simple!  For any of you who like your food to taste like your food and not like sugar sugar sugar, this is the recipe for you.  So apple-y …so oat-y …so quinoa-y ….and so walnut-y.  (I wonder why it’s so hard for me to get writing jobs :P)

Yes you did read that correct – quinoa in a crumble.  See we like to put quinoa in everything at our house.  In our granola, mixed with rice, eaten in salad, some days Brad likes to put a little quinoa in his hair when he’s had a rough week – what do you think makes it stay up?  (Please tell me you all know that’s movie it’s from … )

Recipe time …

Easy Healthy Apple Crumble

  • 1/3 cup half cooked quinoa (use half the water as per the directions and leave it on 5 minutes, it gets a bit chewy but still crunchy)
  • 2/3 cup rolled oats
  • 1/3 cup walnuts
  • 3 small apples
  • 1 tablespoon butter
  • 2 tablespoons brown sugar

Filling: Chop apples into small pieces and put into baking dish.  Melt one tablespoon of butter and pour over apples and mix until apples are coated.

Toping: Mix together quinoa, oats, walnuts, brown sugar and pour over apples in baking dish.

Cook: 30 minutes at 350 degrees

It’s very delicious!  Put a dollop of vanilla ice cream on top for a dessert or a few spoonfuls of yogurt for breakfast.  I finished off this whole batch in about 20 hours.  Serves 4 😛
