I’ve Outdone Myself

Last night, there really should have been one of those green pop up boxes that I mentioned yesterday.  Upon pulling a batch of granola out of the oven it should have said:

MARVELOUS!

I’ve been far too busy to make granola lately but was determined to make it this week.  I always make it with uncooked quinoa but that doesn’t seem to be suiting out digestion in such a favorable way.  So this time I cooked the quinoa for a few minutes to soften it up (but not all the way because we still wanted it chewy).

I also added oats and walnuts and a bit of brown sugar.  Behold the golden-y goodness!

This was not breakfast this morning, but was a late night snack last night.  Don’t worry it’s decaf coffee.  My sleeping routine gets all turned around during finals.  I seem to be up late studying every night.

And Brad who seemingly wants to do everything I do ;) ,  stayed up late to keep working on his latest painting … in the living room grrrrrrrr!

Today is a super exciting day, because it’s our last day of work before vacation.  No wait I should clarify that.  Today is our last day of work before we head over to my father-in-law’s cottage to continue studying and painting without work getting in the way.  We have always taken the first week of August off for vacation.  But since I’m in finals (we’ll be coming back for an exam on Tuesday morning and then heading back there) and Brad has a big art show in September, we need this week to get some serious work done.  At least we’ll be out of the city and off of work.  Don’t worry we’ll make time for some beers and camp fires!

Do you ever use quinoa, or millet, or some other grain to make granola or cereal?  How do you make it – cook it all the way, cook it a little bit, put it in raw?

    I have next week off too. I think what you should do is fly to Vancouver and we can have a picnic. Brad can come too. I feel like he would be quite entertaining.

  3. OMG are you in Vancouver? NExt time we go visit our rellies in Kelowna I need to stop and say Hi!

    I have used puffed millet in granola and love it for the puffiness. (redundant, no?). Haven’t used quinoa yet. I have a HUGE bag someone bought me at Costco that needs to be used up in the next 10 yrs! :-)

  4. YAY! I know you are so ready for a break (sorta). I sometimes think I want to go back to school but then I think about all those lost hours studying…nah :D At least you won’t have to worry about work! Safe travels there :)

      even though I’m studying, I do still count it as a break (yeah sorta) because at least I’m not working and going to school, I only have to worry about school for the next two weeks – that’s relief in my books :)

  5. I think a pop-up box that says “Marvelous” is a great idea!!! Haha. Have a great time on “vacation”…take some time to do something fun in between study sessions! :)
