Yesterday we set out bright and early for a 10:30 am brunch date. That included booze.
Who knows what we were cheering. We also ate breakfast.
Let me tell you what we were not cheering – the service. HORRIBLE. It was a party of 11 and I’m pretty sure that most of us left without tipping. I have this mentality towards tipping: If you leave a small tip because you got bad service, the waitress will think you are cheap. If you leave NO tip, she will get the point.
On to the happier part of day. Dinner! I let (forced) Brad grab some cook books at the beginning of the week so he cook pick out some meals while I was doing our meal planning and grocery list. He picked vegetable fried rice. Have you ever made it before? It involves a lot of hot sizzling oil and well a lot of frying. I most definitely could not bring myself to do that. Here is version of vegetable fried rice, and it involves lots of vegetables.
Healthified Vegetable Fried Rice Recipe
- 1 cup uncooked brown rice
- head of broccoli
- two large carrots, diced
- 1/3 cup green onions
- 1 cup green beans
- 1/2 cup unsalted roasted peanuts
- 1/2 cup corn
- 3 tablespoons soy sauce
- 1/4 cup water
- 2 eggs
Cook rice as normal and set aside to cool.
Put two eggs in a microwave safe bowl and scramble. Microwave for 30 minutes increments, then take out and scramble. Repeat until cooked through.
In a pan add one tablespoon of oil and saute broccoli, carrots, onions, and green beans for five minutes. Add water and cook until vegetables are tender.
Add corn, peanuts, eggs, rice, soy sauce and heat until warmed through.
Makes 4 meal size servings.
We paired it with a simple green salad.
Brad’s verdict – I will definitely be making this again. It was the peanuts that totally made this meal.
After dinner we decided on a bike ride. Look how happy I am.
Yeah happy BEFORE the bike ride. Before Brad lead the way and took me on 30 minutes straight of hills. I should have gone straight to bed afterwards I was so tired, there is no after photo.

That rice looks really good. My mom used to make us “fried rice” all the time. Really, it was just leftovers reheated in a frying pan, but I always loved it.

I agree with your stance on tipping. I am not one to skip the tip in most situations but if the service is horrible why should I feel obligated to leave more money when I probably already feel a little ripped off anyway!
I love making fried rice but I definitely cook the eggs in the skillet that I sauté the veggies in. I hate microwaved eggs!
I like your philosophy on tipping. I definitely have no problem leaving a small tip if I got bad service, but I always feel bad leaving nothing at all. But I see your point on how it may be perceived.
tipping is iffy with me, because I rely on it in my industry. But I have been know to let a waitress know the service has been bad and that it is reflected in my tip. But i’m ballsy like that. I have left without tipping, its tough for me to do, but its been done.
As for the rice dish, looks tasty. Try using raw cashews next time. they are fantastic in stir-frys and such. I love adding them to curries.

I hate leaving no tip, but I think you’re right – a small tip isn’t as notable as none at all.

unfortunately I don’t because I don’t count calories … I do know it will be much lower than a typical fried rice recipe since I’ve used far less oil
