Working until midnight last night kicked my BEEEEEP. Really I am not a night person. I have been in absolute slow motion this morning. For some reason I keep thinking that if I put off my morning tasks (like blogging) then maybe I won’t have to go to work. That has not happened and noon is fast approaching and I must shower mustn’t I?
Let’s move on to more fabulous topics. Like cheese. And jalapeno. Again? Oh yes again. Because it’s not the bread this time my friends, it’s actually jalapeno cheese.
Havarti to be exact. This is a dear old friend of mine. He might have thought that he was upstaged by cheddar jalapeno bread, but he was not. He never will be. Because he goes on english muffins to make egg sandwiches.
Pause for health tip: change up your grains! I like buying ezekiel english muffins instead of regular whole wheat. A varied diet is a very important thing.
Back to ridiculous town. May I present to you one half of my non onion burrito that I kept as leftovers.
Have you ever kept a burrito as a leftover? It’s mushy city. That’s where the reassembly part comes in. Get yourself a new wrap and pull out the contents of the leftover burrito (I recommend leaving the lettuce behind.)
Now throw some new lettuce on there and jazz it up with some salsa.
Et voila! Reassembly nation. I might be sluggish but I am just full of dramatics today aren’t I?
Lucky for you that’s it, I must get ready for work.

My leftover burrito trick is to turn it into a “wet” burrito, by pouring some salsa and shredded cheese on top and then heating it so it’s kind of like an enchilada. That way you don’t care if the tortilla is a little mushy. But if I was craving a non-wet one, your trick of the new tortilla looks like a great idea!
I love leftovers from both restaurants and dinners and challening myself to find new ways to use them creatively. I love hte idea of revamping a burrito with a new wrap!
I don’t usually have leftovers when I eat out (if I don’t eat it all the boyfriend will) but I like the idea of replacing the wrap for the burrito.
I do really weird things like purposely not eat my entire meal when Im out because “this would make SUCH a good sandwich tomorrow”. I really like sandwiches a lot.

I have a weird thing with leftovers in general, they creep me out. I give them to my friends or family before I take them home for myself.
Haha – good for you that you could re-use the burrito!! I, on the other hand, am not so crafty with leftovers…I wish I could enjoy them, I just don’t – UGH~!
I’m queen of reassembly. I don’t even like leftovers of stuff I cook. Eggs are usually involved with the reassembly or reinvention
I love leftovers. I usually just eat them as is. There have been times when I use leftover chicken in a salad or make sandwiches out of other leftovers, such as meatloaf and such.
Whenever I save burritos (always with massive amounts of onions of course) I reheat them in the oven so they can get crusty and delicious again. I have a huge aversion to soggy bread type things….I shiver in disgust thinking about them.
